    **Toki is a Japanese name of a bird, 朱鷺 (crested ibis). As they are on the verge of extinction, Sado City started captive breeding program and managed to increase the population of Toki gradually. These birds are released to the wild and to create a suitable environment for Toki in the wild, Sado City developed guidelines to preserve the environment. For example, if the rice was cultivated based on the guidelines (reduced use of pesticides, chemical fertilizer, conducting biological research (twice a year) in the rice field, the rice is cultivated in Sado City etc.), Sado City will recognise the rice with a “Toki Mai (Toki rice)” authentication.
