This International Women's Day, be ready to raise your spatula to the queens as we shall make ourselves flowers in the form of petit gateaux.
Matcha Garden (3 pcs, 8cm diameter each)
Surrounded by fresh butter-neutral sweet dough is a layer of anko (sweet red bean paste) topped with diced strawberries and handmade milk mochi for a satisfying mouthfeel. Top it off with Matcha diplomat, a dusting of matcha powder, white chocolate pearls and Azuki beans for a creamy, luxurious feel yet light tasting finish.
Berry Fleur (3 pcs, 8cm diameter each)
(from the bottom) Learn the making and assembling of a white chocolate-white sesame feuilletine base, raspberry chocolate mousse, strawberry financier, raspberry centre and a neutral mirror glaze. Mark the coming of the Spring season with the falling chocolate branch of Sakura flowers on top of the cake.
